Broken eggs (or Huevos rotos estilo Lucio) recipe:

Servings: 2 people
Ingredients:
4 potatoes (medium size)
300ml extra-virgin olive oil
4 eggs (medium size)
6 serrano ham slices
1 baguette (optional)
Salt
Instructions:
1. Peel the potatoes and cut them into “fries”.
2. Heat the 400ml extra-virgin olive oil in a large frying pan and fry them. Stirring occasionally until the potatoes are done.
3. Remove the fries from the pan with a slotted spatula and add them into a bowl that already contains kitchen towel (to remove the extra oil from the fries). Add salt.

4. Fry the eggs in a frying pan with 100ml extra-virgin olive oil (it can be the same used to fry the potatoes).
5. Place the potatoes into a plate, add 3 serrano ham slices and, finally, add two eggs. It is optional to accompany the dish with baguette slices.



6. ENJOY the most easy and delicious Spanish dish!
