Chicken and rice recipe

Servings: 4 people
Ingredients:
· 500gr rice
· 1 red pepper
· 1 onion
· 2 tomatoes
· 3 artichokes
· 3 boneless skinless chicken breasts
· 500ml chicken broth
· Olive oil
· 1 tablespoon salt
Instructions:
1. Add 2 tablespoons of olive oil to a pan and bring to medium heat. Fry each ingredient separately (pepper, onion, tomatoes, artichokes, chicken breasts) and keep them in a bowl or plate.
2. Heat the chicken broth in a small pot.

3. Put all fried ingredients into a paella pan, if you have it, if not use a large pan or pot. Add the rice and stir them for 3 minutes. Then, add the salt and the chicken broth until all the ingredients are covered by it. Cover the pan with a lid and every 5 minutes stir them and add more broth. Once the broth is finished, add water if need it. Keep in mind that the rice needs to be covered by liquid until the rice is tender. It will take roughly 25-30 minutes.


4. Keep the pan away from the heat and leave it to rest for 10 more minutes with the lid on.
