Spanish omelette (or tortilla de patatas) recipe:

Prep Time: 15 minutes

Cook Time: 45 minutes

Total time: 1 hour

Servings: 4 people


Ingredients:

  • 7 potatoes (medium size)

  • 1 white onion

  • 400ml extra-virgin olive oil

  • 6 eggs (medium size)

  • Salt

Instructions:

1. Peel the potatoes and cut them into thin slices. Also, peel and chop the onion.

2. Heat the 400ml extra-virgin olive oil in a large frying pan and add the onion. Once the onion is softened, add the potatoes. Stirring occasionally until the potatoes are softened too. Strain the potatoes and onion through a colander into a large bowl (set the strained oil aside).

3. Beat the eggs in another bowl. Then, stir into the potatoes and onion and add salt.

4. Heat a bit of olive oil in a frying pan. Tip everything into the pan and cook for 2 minutes on high heat. Use a spatula to shape the omelette into a cushion. Then, invert to a plate and slide back into the pan and cook for 1 or 2 more minutes (depending on how you like the omelette, row or cooked inside).
